Holiday Vegan Desserts


On Instagram I found Chef Irelis Pérez Cintron’s page. I enjoy watching her stories as well as the photos of recipes she shares but I had never tried any. So I took advantage of the fact that Chef Irelis was going to offer a free class of Christmas vegan desserts at Naturopathic Market, Caguas. Although I am not a vegan I wanted to learn about desserts.

In my case my daughter Natyia, my son-in-law and my grandchildren do not consume dairy products, red meat nor poultry. When I visit them I always learn a little more about their eating habits. I thought by taking this class I can learn how to make vegan desserts and prepare them the next time they visit me.

The class was very enjoyable! The Chef explained the steps very easily and distributed the recipes before starting. There I met different people who were like me and attended the class out of curiosity and others who had gradually changed their eating habits and are vegan.

The first recipe was Vegan Coquíto. The chef prepared it with chestnuts, coconut milk, coconut cream, agave honey, sugar, cinnamon, rum and a pinch of salt. When serving it, she decorated it with cinnamon and grated coconut. She used the coquito that was left over to prepare a cream to accompany a Christmas fruit garland.

In addition to preparing a delicious Guava and Coconut Cheesecake, using a crust that was prepared with coconut cookies. The good thing about this dessert is that it just requires one to prepare the crust and then the mixture and in the mold it is placed in the freezer, covered with plastic adhesive paper for at least 6 hours for the correct consistency.

After tasting her dessert creations, I will prepare more recipes she shares, since I know they taste delicious and are healthier than traditional recipes.
